These muffins are truly a staple in my diet. They are chocolatey, moist, and guilt free goodness for your sweet tooth. I have realized over many years of trying to limit myself when it came to chocolate and sweets that if I just have "better for me" options on hand I will be more successful at staying on track. Also, the protein in these muffins and the fact they are so tasty will keep you satisfied.
Double Chocolate Protein Muffins
Makes 12-18 regular sized muffins
Preheat oven to 350. Grease cupcake tins.
Ingredients:
- 2 C Old Fashioned Oats
- 1 C Cocoa Powder
- 2 Scoops Protein Powder of choice*
- 1 C Baking Stevia
- 1 C Hot Water
- 1 C Liquid Egg Whites
- 1 C Unsweetened Applesauce
- 1 t Vanilla
- 1.5 t Baking Soda
- 1.5 t Baking Powder
- ½ t Salt
- 4 T Mini Semi Sweet Chocolate Chips (divided)
Add all ingredients besides chocolate chips to a blender and mix until combined.
Stir in 2 T Mini Chocolate Chips.
Fill muffin tins 3/4 full and sprinkle remaining chocolate chips onto each.
Bake for 15-18 minutes. Ovens may vary.
Remove from pan to cooling rack. After cooling store in fridge in air tight container.
*I have tried this recipe with multiple flavors of whey and plant based protein and it has always been good, I just use what I have on hand.
